Capellini Pasta with Checca Sauce (No-Cook Tomato Sauce)

- 12 ounces capellini pasta
- 16 ounces cherry tomatoes, halved
- 5 green onions, coarsely chopped
- 4 garlic cloves, crushed
- 10-12 fresh basil leaves
- 4 tablespoons As Pontis Organic Extra Virgin Olive Oil
- 4 ounces fresh mozzarella, cut into 1/2 inch cubes
- finely grated Parmigiano-Reggiano, for garnish
Bring a large pot of salted water to a boil. Place capellini in water and cook until al dente.
While pasta is cooking, combine tomatoes, green onion, garlic, and olive oil into a food processor. Pulse ingredients until they are coarsely chopped—do not purée the sauce. Add salt and pepper to taste.
Drain pasta. Toss tomato sauce, fresh mozzarella, and pasta in a large bowl. If desired, drizzle more olive oil and toss again.
Plate pasta, garnish with Parmigiano-Reggiano to desired amount and serve immediately.
